Healthy Rhubarb Recipes: Weird Trivia

4 tsp extra-virgin olive oil, divided
Rhubarb and Orange Water-Ice
Ingredients:
- 12 oz rhubarb
- 1 medium orange
- 1 tbsp clear honey
- 1 tsp (1 sachet) powdered gelatin
- Orange slices to decorate
Method:
1 1/2 tsp ground coriander
- Trim the rhubarb and slice into 1in lengths.
- Put slices in a pan without adding water.
- Finely grate the rind of the orange and squeeze out the juice.
- Add about half the orange juice and all the grated rind to the rhubarb within the pan and permit to simmer until the rhubarb is just tender.
- Stir in the honey.
- Heat the remaining orange juice and sprinkle inside the gelatin to dissolve it.
- Stir into the rhubarb.
- Place the mixture into the cylinder of an ice cream maker and freeze based on the manufacture's directions.
Or when you tend not to have an ice cream maker proceed as follows:
- Turn the complete mixture into a rigid freezer container and freeze it for about 2 hours till slushy.
- Remove the mixture from the freezer and beat it well to break up the ice crystals.
- Return to the freezer and freeze again till firm.
- Allow the water-ice to soften slightly at room temperature just before serving.
About the rhubarb: Most pink, forced rhubarb is naturally rather sweet, but if yours is not, you could add much more honey, sugar or artificial sweetener to taste.
This is often a delightful dessert right after a heavy meal. But, if course, you tend not to only need to serve it as dessert, it will also be really tasty to clean the palate b in between courses.
